8 vegetables you can regrow again!
Ginger
Take a piece of ginger and partly submerge it in water. As soon as it has developed new roots, the vegetable can be put back into the soil. A new ginger tuber will start to grow below the earth.
Carrots
If you take the upper stump from a carrot, you can cultivate a wonderful new carrot top. This should also be placed in a glass of water. Any windowsill will provide the perfect spot for this vegetable to grow. The newly-grown leaves are excellent for seasoning dishes like soups, for example.
Celery
You can also keep the base of a bunch of celery. In a bowl with water in a bright place, leaves in the middle of the base will swiftly become visible. When this has happened, the base can be re-planted. You simply have to wait until a new celery plant grows from it. The same applies to cos lettuce. The base should also be placed in a bowl of water. As soon as it sprouts new leaves, this vegetable can be re-planted.
Lettuce
Lettuce and other leaf vegetables can be treated with a method similar to that used with celery. Vegetables can swiftly grow back from the remains of the stem. These have to be placed at first in warm water, until they can subsequently be re-planted a week later. Lettuces should be harvested so that the roots remain with the outer leaves.
Garlic
Garlic cloves are perfectly suited to re-planting. A little sand mixed into the soil will guarantee successful cultivation. And the best thing is that the vegetable which grows from the clove is also edible! It has a much milder flavor, not quite as overpowering as garlic itself.
Basil
Basil also re-grows well. You simply take stalks with leaves, and place these in a container with water. After a short time you will already notice new roots appearing. When these have reached a length of a few centimetres, you can re-plant them, and watch a new basil plant grow.
Leek/Spring Onion
Simply keep the thicker parts down where the roots begin, and place them in water. You should change the water daily. You will soon observe new roots appearing after a very short period of time, and the plant will start to grow again. You could re-plant it straight away, but it is better for the plant to let the roots develop first.
Lemon Grass
Just place the stem of the lemon grass in a glass of water. Just like with spring onions, you should change the water every day. It takes a while longer to grow back, but after only two weeks you will notice the first new roots. When the roots have become sturdy, in that they are more robust and resilient, you can re-plant them in a pot containing fresh soil.
Most vegetables develop new roots in 1-2 weeks. The rate of growth and time of harvesting depends on the individual plant. Lettuce and leeks are the fastest-growing plants, while other plants like lemon grass or rhubarb take considerably longer to grow.
These are just a few examples. Growth rates and period of ripening depends on the plant variety. Leaf lettuce varieties grow quickly, and leeks are equally fast-growing. Other plants require significantly longer.
Rhubarb, rosemary, thyme, potatoes and almost all culinary herbs can be rooted for re-growth. You can even re-grow fruit, although you need to have a “green thumb”, for example, in order to get a fresh pineapple to develop roots. But with this way of regrowing you can keep a healthy nutrition the easy and cheap way.
