Carrot cupcakes
This delicious and healthy recipe idea takes just 20 minutes (plus 30 minutes baking time).
ingredients:
(for 12 muffins)
- 225 g grated carrots
- Grated peel of 2 oranges
- 2 eggs
- 1 cup brown sugar
- 1 cup olive oil
- 55 g chopped nuts
- 55 g raisins
- 150 g self-rising flour (flour and baking powder mixture)
- 1 coffee spoon of cinnamon
- 1 coffee spoon of ginger powder
- 1 tsp vanilla extract
- 1 tsp butter
- 115 g cream cheese
- Grated peel and 1 tsp lemon juice
- 1 cup of powdered sugar
Preparation:
- Preheat the oven to 200°C.
- In a bowl, mix olive oil, brown sugar, nuts, raisins, carrots, spices, and half of the grated orange peel (it's a task your kids can do!). Add flour, eggs and vanilla extract and mix until smooth.
- Pour the dough into 12 muffin tins and bake in the oven on the middle rack for 30 minutes.
- While the muffins are cooling down, it is time to prepare the garnish so that the muffins become cupcakes. For a really healthy, low-calorie and low-carb topping, decorate the muffins with just the remaining orange peel. The whole thing is even more delicious when you mix the remaining ingredients with the lemon peel and process them into a creamy garnish — delicious!
Easter eggs jello
Bubbly, wobbly, gelatin — kids love it. With its special consistency and numerous colors, it just invites you to play. It's hard to believe that gelatin is even healthy: It strengthens the immune system, improves digestion, beautifies the complexion and strengthens hair and nails. We have a great idea how to make this children's classic a real Easter surprise — and impress everyone at Sunday breakfast or Easter dinner.
ingredients:
(for 6 pieces)
- Your kids' favorite jello (different tastes and colors)
- 6 chicken eggs
Preparation:
- Rinse the eggs under running water and use a knife to make a small hole in the bottom of each egg. Enlarge the hole by turning the knife until it is approximately one cm in diameter.
- Now it's your kids' turn: let the egg yolk and egg white run into a bowl (can be used for another recipe, such as a delicious portion of scrambled eggs: a quick, healthy, protein-rich and vegetarian recipe for every day).
- Rinse the empty egg shells thoroughly with water and bake in the oven at 150°C for about 10 minutes.
- Prepare the jello as instructed on the package. Place the eggshells in the cardboard box so that the hole is at the top. Now let your children fill the jello into the eggshells using a funnel until they are full. Place the eggs filled with jello in the freezer overnight until they are firm.
Banana chocolate popsicles
You (or your kids) don't want to miss out on chocolate at Easter? We can understand that very well and have a great recipe idea for this case too, which is sweet and quick to prepare and yet is still considered healthy — and it tastes as great as it sounds.
ingredients:
(for 6 popsicles)
- 3 medium-ripe bananas
- 6 wooden sticks
- 3 tablespoons of chopped almonds, peanuts or other toppings to suit your taste
- 1 bar of dark chocolate (at least 65% cocoa)
Preparation:
- Your kids can peel the bananas and cut them in half. Skewer each half onto a wooden stick and place on a tray.
- Cover the bananas with plastic wrap and put them in the freezer for about 3 hours.
- Break the chocolate bar into pieces and let it melt in a water bath. Stir thoroughly and pour into a tall glass.
- Dip each banana half into the liquid chocolate and turn it so that it is completely covered. Wait a minute and then roll over the chopped almonds (or other garnish). Put it in the freezer for another 30 minutes — done!
